I was early up this morning. 6 am I was at my restaurant GLÓ making todays RAW cakes. I love working early morning when the energy is so strong, clear and pure. Listening to good music,  Seabear, I sing I swim.

RAW Coconut cup cake¨*•.¸¸♥
This is one of my husbands FAVORITE recipe *¨•.¸¸♥ The best part: SOOOOO easy to make.
crust:
2 c pecans
1 ½ c dates
½ c cacao/carob powder
2 Tbsp maple or yacon or agave
hint of salt
Place all the ingredients in a food processor. Process until the mixture just sticks together. Press into small muffin pan and set aside in the freezer for about 1 hr.

filling:
1 c cashews soaked soaked for 4-6 hrs
1 c meat from young coconut
1/2 c maple or agave or yacon or honey
1/4 c coconut oil
2 Tbsp shredded coconut
2 Tbsp coconut "milk"
dash of vanilla
pinch Himalayan salt
Place all the ingredients in a blender and blend until smooth¨*•.¸¸♥ Decorate with fresh fruit:*

SALAD mmmmm ¨*•.¸¸♥

My garden is blooooooming and I love to make salads from the garden, using the greens + vegetables and flowers. This is one of my favorite:

Salad: 1c broccoli + 2-3 big handful different greens + 1/2 cucumber + small hand full fresh coriander + 1 avocado + handful of Viola tricoloa

Avocado dressing: 1 avocado + 1/2 c mango + handful cilantro + handful fresh basil + 2-3 spring onions + 1 inch fresh ginger + juice from 1 lime + shredded peel from 1 lime + 1/2 tsp sea salt + 1 c water = blend and look forward to enjoy ¨*•.¸¸♥

RAW trip into the Icelandic Highlands

We had the most wonderful RAW trip into the Icelandic Highlands with Mr. Avocado and friends. On our way we did bath in 4 natural hot tubs: Hveravellir, Laugavallalaug, Grjótagjá, Víti. We felt like in PARADIS, breathing fresh air, climbing and hiking, drinking the water fresh from the spring and rivers, picking herbs & making tea, picking berries + and enjoying live. We are so blessed to have access to unspoiled nature, fresh air and best water in the world.*

I am already looking forward to the next trip: BERRY picking in late August¨*•.¸¸♥

Best day ever in Iceland

We are really blessed here in Iceland. Few weeks ago we had David Avocado Wolfe giving couple of events: Best Day Ever. They both sold out really quickly. It was such a amazing week. Along with Mr. Avocado his friends Wheat Grass Messiah + Sky & Denise came to stay with us. The house turned into this wonderful RAW world where everyone made bliss full juices, super food drinks, kale chips to live for, reishi tea, drinks from another world and CHOCOLATE yummi:* The events were the BEST ever, people loved Mr. Avocado and his crew. David was on the national TV giving interview on Super Foods. The biggest newspaper also made a whole page interview and I don´t think anyone should be surprised when I tell you that GOJI berries SOLD OUT in Iceland as well as Hemp seeds and Maca. So the message went through to people. Think about that - totally sold out.....:*
